Santé Chocolate Bar

A nineteenth-century Genoese recipe preserved with devotion: chocolate made as it once was, with only cacao and sugar in near-equal measure.

The Santé is made in the traditional manner, using only cocoa and sugar in almost equal quantities, with no other ingredients added. The conching process was unknown at that time, which means that the chocolate has a texture unsuitable for moulding. Originally, it was mainly eaten grated and melted in a cup, and was regarded as having excellent nutritional properties. It was traditionally known as santé to distinguish it from the more easily available chocolate of those days, which was frequently adulterated, and was valued for its nutritional properties.
